A Canadian-Inspired Thanksgiving Breakfast Buffet

Have a delightful Thanksgiving breakfast or Thanksgiving brunch buffet with this luxurious menu of tasty recipes.

Deluxe Green Tea Smoothie
 
For four servings:
 
4 green tea bags steeped in 6 cups of water, cooled
 
2 ¼ cups of orange juice with no pulp
 
½ cup of  low-fat or regular vanilla yogurt
 
Pinch of salt
 
2 kiwis peeled and diced
 
1 ½ cups of ice
 
Combine all ingredients in a blender.
 
Blend on high until frothy.
 
Pour into chilled glasses and serve.

Delightful Brie Crostini with Mango and Red Pepper Salsa
 
              If you make the salsa ahead of time, the flavors will blend better for a more exotic flavor.
 
1 ½ cups of chopped mango
 
2 red peppers finely diced
 
2 green onions finely diced
 
½ lime juiced
 
2 tablespoons of fresh parsley chopped
 
1/3 teaspoon of salt
 
1/3 teaspoon of pepper
 
2 tablespoons of orange marmalade
 
White baguette cut into 12 to 14 thin slices
 
2 ¼ tablespoons of olive oil
 
Double cream brie cheese log cut into 12 to 14 slices
 
2 red onions, diced and fried in butter until light golden brown
 
 
             
To make the salsa, mix together mango, peppers, green onions, lime juice, parsley, salt, pepper and marmalade.
 
              Cover and chill for at least two hours, up to one day before using.
 
              To make the crostini, preheat the oven to 375 degrees F.
 
In a bowl, toss slices of baguette with olive oil.
 
              Arrange slices in a single layer on parchment paper-lined baking sheet.
 
Toast in oven 6 to 7 minutes, or until tops are golden. 
 
Cool.
 
Top crosustini with brie, fried onions and salsa.
 
Serve and enjoy.
